Peter Wright: The Importance of Food Safety | On the House #1

Meet Peter Wright

Peter Wright’s skills were honed during the 1990s and 2000s through major events and stadiums throughout Australia and internationally. One of those events is the Sydney Olympics, which served as his launch pad for his career.

In 2007, following the redevelopment and successful Commonwealth Games at the iconic Melbourne Cricket Ground, Peter started his first consultancy business and became the President of the Australian Culinary Federation — a position he held for nine consecutive years.

Developing the “World Menu” for elite athletes has allowed Peter to consult and cater to several major athlete’s villages, including those at the Commonwealth Games, Manchester, Melbourne, Glasgow, and Gold Coast, as well as the Olympic Games in Sydney, Vancouver, Beijing, and Rio.

Peter has successfully developed his brand for both consulting and catering on the world stage. He recently completed catering at the 12 stadiums at the Japan Rugby World Cup in 2019.

Peter also managed the Food and Beverage operations at the USA Pavilion at the Dubai World Expo in 2021.

On top of all his achievements, he represented Australia at the Culinary Olympics twice and bagged gold medals in both events.

Furthermore, our guest holds the title of World Chefs Certified Master Chef and is also a member of the World Chefs’ board. In addition to having a degree in hospitality, he is also a certified sports nutritionist.

About the episode

The episode started with Peter establishing the importance of having a food safety management plan in the house — a place where people spend so much of their time at. He also some must-know information on food safety at home and when eating out, food deliveries, salmonella, and leftovers (i.e. should you throw that or eat that).  This episode is abound with practical tips from Peter that will help any household and these include rules and strategies on washing and peeling vegetables, storage, refreezing food, bugs in flour and nuts, and so much more.

In conclusion

The takeaways from this episode are going to be life-changing. But if there are some tips that you need to remember now, it’s that the best practice to start food safety is washing hands when you first get home.  Get into the habit of planning weekly meals, and teaching yourself how to cook. Cooking for yourself removes processed food from your diet, it brings fresh ingredients into your diet.
